recipe

It's Summer. It's hot. So, along with a frosty beverage, what you really need is a tasty snack that doesn't require any heat to prepare. Luckily, avocados are delicious and in season now. It's time you learn how to make your own guacamole. You won't be sorry!

What You'll Need:

  • 2 avocados - peeled, pitted and diced
  • 2 teaspoons salt (sea salt is best)
  • 1 large tomato, diced
  • 1 clove of garlic, finely diced
  • 1 onion, diced
  • 1 Jalapeno pepper, chopped
  • 1/2 tablespoon chopped fresh cilantro
  • 2 tablespoons fresh lime juice- A whole lime cut in half or quarters is best

Step by Step:

  1. In a medium bowl, mash the avocados.
  2. Mix in the tomato, onion, garlic, jalapeno, cilantro and lime juice.
  3. Add Salt and lime juice a little at a time, until it's to your liking.
  4. Cover and chill in the refrigerator for at least 30 minutes before serving.

Yield: 2 servings.

Pro Tip:
If you like it spicy, skip the tomato and jalapeno and mix in some of your favorite salsa. To keep the guacamole from going brown, leave one of the avocado pits in the finished avocado, and when you store it, press plastic wrap tightly against the surface of the guacamole to prevent air from getting in.
